Making courgetti with my Hemsley & Hemsley spiralizer...

As you know, I have been trying to eat more healthily recently and when Legal & General challenged me to get more fruit and veg into my life, I was sold. Whilst I will never look as glam in the kitchen as the Hemsley girls, their spiralizer makes it super easy to make courgetti and the like- and yes, that may be the most pretentious sentence I have ever written! ;) I was advised to switch to a low carb diet by my diabetes team a little while ago so anything that can fill me up without using all of my 30g meal allowance is a winner with me. I rustled this up for a quick lunch for me and Mark at the weekend and I was pleasantly surprised at how delicious it was and how easy it was to make...




After unpacking the box, I have to say I was a little bit overwhelmed as I wasn't sure how to use it and parts of it look pretty mean- I wouldn't want to get on the wrong end of the 'spiky wheel of death' as Mark named it! There are 3 blades in total which are handily stored underneath the mechanism in the body of the spiralizer and on a plastic plate so despite them being very sharp, there's no risk of cutting yourself, even if you are as clumsy as me. 


Before we tried making courgetti, we experimented with spiralizing an apple...


...which was SO much fun! Once I had worked out how to use it (basically push the bottom handle whilst cranking the top one) I was away!


I switched the ribbon blade for one of the noodle ones and after chopping my courgette into thirds, I started spiralizing!


You do end up with some very odd looking end bits though, this reminded me of an elephant's trunk... 


One courgette makes about this many 'noodles' and whilst I plan to make my own pesto, I had some left over so decided to try the easy way instead ;)


Melt a knob of butter into a pan...


Add your noodles and cook for about 3 minutes until softened. I was impressed by how sturdy the noodles were, they may have only been made of courgette but they survived being cooked and me prodding them every two seconds so thumbs up from me.


Add a dollop of pesto and stir in... 


Garnish with a sprig of basil and enjoy!

I REALLY want one of these, lakeland sell cheap things that look like potato peelers which do something similar which I might try before I splash the cash to see if I like it xx

I really want to try courgette noodles! I've seen so many fab recipe ideas for them on Pinterest and as I love pasta this would be a great alternative. Looks a bit fiddly though! Oh, if you ever want to make courgette ribbons to use instead of lasnage sheets, a cheese slice works really well!x
