Apple and blackberry sponge pudding recipe...



Apologies for the lack of foodie posts recently! I have been training and working long hours for my job at Asda, ready for opening our new store (which I am very excited about!) so I haven't had much time to eat/cook anything worth photographing until Mum made this gorgeous apple and blackberry sponge the other day. There's something about the combination of blackberry and apple that always reminds me of Autumn and this recipe is a good way to use up 'offensive' looking apples and perfect for easing you into the chillier months...


Grease a small glass dish and add chopped fruit.


Add sugar to taste...


Weigh out 4oz of butter, 4oz sugar and 40z flour onto one bowl and add 2 eggs...



Cream mixture until pale and smooth...


Add to the dish on top of the fruit...


Cook at 180 °C until golden brown.


Serve with lashings of thick creamy custard! 


An' oh so simple' yet utterly delicious recipe which you can adapt to fit whatever fruit you have in the freezer/in the garden and so quick and easy to make too!

That look delicious! I love hot sponge puddings in winter, my favourite is jam sponge but I love all apple based desserts so I'm sure this would be a winner too! x

I may have to make this to satisfy my craving for this blackberry and apple crumble cake we have at work. I sympathise with the crappiness of food jobs! Living the graduate dream eh?! ;) Thank you for your lovely comment the other day, it made me feel much better to remember there are other people in my shoes! I was going to ask you whether I could perhaps meet you on Monday since I am going up to Grants for the weekend and he would be at work, but M&S have extended my contract (it was meant to be finishing on Saturday) so I have to go back really early Monday morning. Boo. But seeing you at some point would be great!

I just said 'mmmmm' out loud and my mum thinks I'm mad...
Looks so good, I don't have an oven at the moment and I really want a crumble grr. I did stew soem old apples with a little water and sweetner and had it with some custard a few days ago. Nice and warm and filling xx

Oooh I love blackberry and apple - we always make it with the slightly bitter crab apples that grow at the bottom of our garden. Amazing what a bit of sugar can do really!

This has become my go-to recipe.
Any time I'm in a fix (e.g. extra dinner guests arriving so smaller main portions), I just make this. I vary the toppings all the time as I don't always have the same fresh fruit. Nothing quite beats frozen cherries. (Defrost 1 to 2 packs of cherries in a pan with a little water and sugar, drain the cherries out and reduce the syrup before recombining.)
