Cake will always be a firm favourite chez Fallon and this delicious almond cake is the latest addition to my (limited) repertoire. My friend had a 'countries stereotypes' fancy party for her birthday a few weeks ago and I went as Spain so took along this (supposedly) Spanish cake as my contribution- along with the ingredients for this lethal, yet delicious, pomelo fizz. I'm not 100% sure this cake came out as it was supposed to as I found this recipe quite confusing but we muddled through and we rewarded by a light and zesty sponge which went down a treat with everyone, even with people who don't like almonds!

Boozy garlic and sage chicken...
As you may have seen, I have had to switch to a low carb diet so protein, especially chicken, is a huge part of my meals at the moment. I had a real craving for roast chicken the other day so I decided to adapt Leon's 'chicken with 100 cloves of garlic' for our Sunday lunch. Apologies for any vegetarians out there, there are a lot of pictures of meat in this post! ;) The meat from this chicken went a long way and the flavour just got better after it went cold- I will definitely be making this again!

Courgette fairycakes...
There are a few things that you can expect to see on a regular basis over at Frills 'n' Spills, ridiculous poses are up there, bright colours are always popular, but food and recipes are always a given. I got the Leon 'Family & Friends' cookbook for Christmas and this is the first recipe I have made from it and as ever, Leon have not let me down. Mark and I made these cakes last weekend and they are a lovely light treat to eat whenever you fancy something sweet. (I'm a poet and I know it...) Thanks to the courgette I think you could also count this as 1 of your 5 a day too* - bonus!

Portobello mushrooms with pesto and roasted vegetables...
Recently I have been trying to be a bit more healthy and eat food that is tasty without being full of rubbish. The problem is, in the week when I am at work, I just want something quick and easy which is where the problems can creep in... I picked up these mushrooms when I went to my first car boot from a local grower and they tasted amazing. I simply blobbed a bit of basil pesto (technical term there!) onto the top of the mushrooms and sprinkled a bit of cheese on the top (hey I said I was trying!) and put them under the grill for ten minutes with some chopped up mushrooms and cherry tomatoes until the cheese started to bubble.
How to make fish pie...
Now I know it isn't for everyone but fish pie has to be one of my favourite dinners, it is (relatively) good for you and is definitely high on my list of comfort foods. I made this one last weekend and deliberately made a huge one, Mark and I had a massive portion each and we have another 2 dinners (at least) in the freezer...

Smokey bacon and prawn salad...
Inspired by Gem's oh so delicious looking spaghetti recipe, dinner tonight consisted of rocket, watercress and spinach salad topped with home-grown French and green beans, king prawns, smoked bacon, tomato pepper and mushrooms.
Delicious. Sometimes simple really is best.

Roasted peaches...
Now we finally have some hotter weather again, I felt it was time to share one of my favourite summer puddings: roasted peaches. I love peaches cooked on BBQs but these are a fab alternative which you can cook in the oven, indulgent and yet vaguely healthy because it contains fruit- that's my kind of pud!

I am a big fan of the BBC Food website and when I saw this recipe featured last week, I knew what I was making this weekend! I have to say, I used shop bought pastry (boo hiss!) as I find it impossible to make [blame my warm hands!] but I bet it would taste even better if you made your own...

Homemade caramelised onion bread...
When Mark and I moved out, one of the things I was most excited about was having our own bread-maker. For about 7 years now my family have had homemade bread and it is always much nicer than shop bought. The problem is, when there is 2 of you, rather than 7, a loaf doesn't get eaten fast enough. Recently I have been all about tear and share bread which is SO easy to do and really makes even the most uninteresting meal seem special...
Leon cherry and almond cookies with chocolate chips...
There is nothing better than the smell of freshly baked goods wafting through the house, apart from not having to make them yourself.After a horrible few days of being ill and feeling sorry for myself, Mark decided to take decisive action and snap me out of my stupor by baking me some cookies.I love my Leon cookery books ( I also posted about the tracker bars I made) and Mark adapted this recipe from one in the Leon cakes and puddings book, which produced some wonderfully nutty cookies.

Green vegetable salad with crispy chorizo and pesto...
I adapted this dinner from a Waitrose recipe card that I picked up the other week. We have had some chorizo in the fridge for a while now and I was totally lacking inspiration about what to do with it so this recipe couldn't have come at a better time... [Recipe I think is too strong a word for this, it is basically a load of yummy ingredients thrown together, there's not much method involved...]
Serving suggestion: best eaten with a glass of rose and good company.

A proliferation of pastry goodness...
In our family, food is king. We have always had fantastic home-cooked meals and I can guarantee that no shop/restaurant food will be anywhere near as good as any made by my mum or grandma. They both seem to have a magic touch with pastry (I think it's their cold hands that make the difference) but I am definitely queen of eating it ;) Apologies for the phone photos but I had to snap these pictures before they all got snaffled!
Mini apple tarts are always a winner in the Fallon household!
Golden syrup topped with the excess pastry and sprinkled with cornflakes to make an extra gooey treacle tart...
Food is more fun in minature form and these tiny quiche Lorraines are no different! Just add ham and cheese to some beaten eggs and pour into the pastry cases...
My personal favourite: goats cheese tartlets with caramelised red onion. Literally heaven in a pastry case. To caramelise the onion I used half a red onion, a teaspoonful of sugar and a splash of balsamic vinegar and simmered on a low heat until the sugar started to go brown. The perfect accompaniment to any kind of cheese and possible present for foodie relatives or friends...

Starting the year as I mean to go on, good food, fab company and plenty of coffee... The Cosy Club in Bath, Chiquitos, Starbucks and Caffe Nero played host for ringing in 2012. For me, January is not about slimming down or starting a diet but making exciting plans to fill up your diary. I plan on meeting up with many more amazing bloggers and spending time with old friends...

Homemade fig roll recipe...
You all know how much I love The Cookiepedia and I was determined to try out as many recipes as possible after I got it. I have always loved fig rolls and so this recipe was top of my list... Although the recipe said that they tasted of shop bought fig rolls, I thought this recipe wasn't anywhere near as sweet and much more like jam roly poly!

Amaretti biscuits with chewy centres... the recipe of dreams!
I love all things almond so amaretti biscuits have always been high on my list of favourite biscuits. The only problem is, no-one makes them so they are chewy in the middle! When I saw this recipe in 'The Cookiepedia' I knew that it was going to be first on my list of cookies to make. This recipe was super quick and very easy and the biscuits taste even better the next day too, this is definitely my new favourite recipe to 'wow' people with...
The Cookiepedia: a review
One of the best things about having a blog is being lucky enough to try out products that I might otherwise not get the chance to. I was contacted a few weeks ago by Mat from PGUK and he very kindly offered to send me a copy of 'The Cookiepedia' by Stacy Adimando. You all know how much I like baking and I thought that it would be a good opportunity for me to try out some new recipes and hopefully showcase a fantastic cookbook at the same time... win win all round right?
