Goat's cheese, spinach and red onion stuffed aubergine and butternut squash...

This dinner came about after realising that we had a load of food in the fridge that needed using up. As it turned out, this was far too much food for the two of us and we had to save it for another meal but for 4 people, this would be perfect.



Chop your aubergine and butternut squash in half and scoop out the middle), place on an oven tray and grill on approx 180°C for 10/15 minutes. 


Whilst your squash is grilling, chop a red onion, and fry in a pan with some brown sugar and a dash of balsamic vinegar and some red wine and simmer until cooked through...


Blast some spinach, goat's cheese and bread in your blender until completely broken down into breadcrumbs...


Like so...  If I was making this again I may have omitted the breadcrumbs but I do think the goat's cheese mixture needed something to hold it together, I will have to experiment I think!


Add the breadcrumb mix to the top of your aubergine and butternut squash, then add your caramelised red onions and put them under the grill for another 5 or 10 minutes. We also added some mushrooms and tomatoes to grill alongside the other veg but this would be equally nice without...


Remove from the oven and serve with a nice glass of red wine!

mmmmmmmmmmm!! this would be so low on WW for me too, would just need to count the bread, cheese and sugar. Could apapt this to make it really low x
