Now we finally have some hotter weather again, I felt it was time to share one of my favourite summer puddings: roasted peaches. I love peaches cooked on BBQs but these are a fab alternative which you can cook in the oven, indulgent and yet vaguely healthy because it contains fruit- that's my kind of pud!
Choose your peaches, I used 5 as they had gone slightly overripe- this recipe is a great way of using up slightly overripe fruit and you could use any soft stoned fruit for this, I particularly like plums like this too!
Chop your peaches in half and remove the stone, place in a baking tin with sides...
Pour over your wine of choice (I used rosé) with enough to pool in the pit where the stone was and for the peaches to sit in.
Sprinkle over with sugar (I wish I had some brown sugar because that would be lovely!)
Cook in a preheated oven at 180°C for 12-15 minutes or until the fruit is caramelised and soft...
Serve with a massive bowl of Greek yoghurt and enjoy!
