I love all things almond so amaretti biscuits have always been high on my list of favourite biscuits. The only problem is, no-one makes them so they are chewy in the middle! When I saw this recipe in 'The Cookiepedia' I knew that it was going to be first on my list of cookies to make. This recipe was super quick and very easy and the biscuits taste even better the next day too, this is definitely my new favourite recipe to 'wow' people with...
Take 1 cup of almonds...
...and 3/4 of a cup of sugar...
Blast in the food processor until smooth, then add one egg white. This makes a slightly grainy paste.
Add a second egg white and 1/2 teaspoon of almond extract and continue blending the mixture until you have a smooth purée...
Dollop the paste onto a lined baking tray using teaspoons into blobs the size of 10p pieces, spaced about 2 finger widths apart [very scientific measurements here!] As you can see, it took me a while to standardise my measurements but I eventually fixed it!
Bake at 170 °C until they are crispy and browned, I found that if you cook them for longer, the outside edge contrasts nicely with the gorgeously chewy middle...
Leave to cool for 5 minutes before eating the entire tray transferring to a wire rack. Enjoy with a cup of tea or coffee and marvel at your new found expertise to impress people with very little effort!

Yum yum - I'll have to try this for the free from peeps - wheat, gluten and dairy free. Seems quite simple. I should be able to adapt it. :D xxxx
