Recently I have been trying to be a bit more healthy and eat food that is tasty without being full of rubbish. The problem is, in the week when I am at work, I just want something quick and easy which is where the problems can creep in... I picked up these mushrooms when I went to my first car boot from a local grower and they tasted amazing. I simply blobbed a bit of basil pesto (technical term there!) onto the top of the mushrooms and sprinkled a bit of cheese on the top (hey I said I was trying!) and put them under the grill for ten minutes with some chopped up mushrooms and cherry tomatoes until the cheese started to bubble.
Take some fresh salad, this was a mix of watercress and rocket and add a splash of balsamic vinegar over it.
There is nothing I love more than roasted tomatoes and these were deliciously sweet...
For a dinner that took all of 15 minutes from start to finish it was delicious. I loved the Italian feel to it thanks to the pesto and balsamic vinegar and it is definitely something I will be trying again, maybe with some homemade bread? Best of all though, it was so cheap and also suitable for all you vegetarians out there (I am usually an unashamed meat eater but this may have converted me!)

Yum, this looks totally delicious! I'm such a big fan of anything with mushrooms. I'm really loving soups at the moment, I think it's the time of year, if I make a whole bunch at the start of the week that is my dinner sorted for at least a couple of days. It's a little bit more time consuming (especially if you make your own stock) but it cheers me up after a long day xo

I'm not a mushroom fan, but my boyfriend is so I think I may have to brave them and make this because it looks amazing!
Grilled vegetables and home made soup are my go to healthy meals when I'm in a hurry. but it is so difficult when you are busy and working late nights etc not to snack, and snacking is my total downfall! Well, that and wine...
To be honest, oven chips, beans & egg is my quick go to dinner when we can't be bothered cooking too much! I like making big servings of stews though to freeze.
I love mushrooms done like these, nice and simple! My quick dinner recipes are always noodles - it's just easy!
