Bakewell tart...

I am a big fan of the BBC Food website and when I saw this recipe featured last week, I knew what I was making this weekend! I have to say, I used shop bought pastry (boo hiss!) as I find it impossible to make [blame my warm hands!] but I bet it would taste even better if you made your own...




First things first, roll out the pastry on a cool, floured surface. Whilst you are doing this, preheat the oven to180C/Gas Mark 4 and grease and flour a loose-bottomed tart tin, if you have one. I don't have one of these, so I used a casserole dish. Once the pastry is in the dish, don't forget to prick the base with a fork. Put some baking paper in the base and cover with some baking beans (or some uncooked rice, or anything heavy and oven proof!)


 Leave the pastry in the oven for 15 minutes. Put 400g of ground almonds and 175g of caster sugar in a bowl and mix well. Beat 8 eggs with some almond essence (about half a teaspoon) in another bowl. Slowly add the eggs to the ground almond and sugar. Make sure it is well mixed.


Get the pastry out of the oven, remove the baking paper and let it cool. Turn the oven down to 165C/Gas Mark 2. Spread a generous layer of raspberry jam over the pastry base. 


Next, add the almond mixture on top of the jam.


When the pastry base is filled, sprinkle a load of flaked almonds on top.


 Pop it in the oven for 25-30 minutes, remove, wait patiently for it to cool and then enjoy!


P.S. We had some pastry left over, so we made this little apple and cinnamon turnover. Just chop up an apple, mix some brown sugar and cinnamon and cook in the oven...

Ohh my goodness! This looks so delicious! I'm a huge lover of Bakewell Tart too, well anything almond flavoured really! I might have to try this, though I'll be using shop brought pastry too, I've never been able to make good pastry!
