Quick and easy homemade chicken nuggets...


My mum first found this recipe in her Waitrose magazine and it has been a staple recipe for me ever since. Trashy food is always tempting but homemade chicken nuggets are a lot better for you than shop bought ones, especially if you use turkey like I did!


I usually use the ends of a loaf of bread as I never use them and I hate food going to waste. This bread is from the Hovis granary loaf which I like as it a lot better for you and gives the nuggets a slightly richer taste.


After crumbling the bread down to breadcrumbs, I added some paprika and cayenne pepper to add a bit more flavour but you can add whichever spices you like...


Dip the chicken/turkey pieces into egg and then into the breadcrumbs until they are covered and look something like this! Place the nuggets onto a tray and cook in a pre-heated oven at approx. 180°C and cook until golden brown and crispy.


Serve with a fresh green salad, coleslaw and fries for an indulgent and easy to prepare dinner!

at the moment I'm addicted to roasted squash (waitrose sells SO many types) stuffed with ratatouille and prawns/chicken/tofu. but I am breaking routine for these!
