The best peanut butter cookie recipe...


When I was younger I had a real sweet tooth and liked nothing more than baking (and eating!) sweet cakes and treats although I usually prefer something more savoury these salty peanut butter cookies are the perfect mix of sweet and salty.  This recipe is a slightly adapted version of one from my beloved Cookiepedia- Americans sure know their cookies!



First, measure out 1/2 cup of unsalted butter, 1/2 cup light brown sugar and 1/2 cup of normal white sugar.


Cream the butter and the sugars in a bowl until it looks light and fluffy. Add one egg and 1/2 teaspoon of vanilla extract and keep mixing until it is all combined.


Measure out 1 cup of peanut butter. I used crunchy peanut butter but it will work with the creamy one, too - whatever you prefer!


Add the peanut butter to the mixture until it is combined. I also added chocolate chips, because why not?! 


Measure out 1 and 1/4 cups of plain flour and 1/2 teaspoon of baking soda. 


Sift half of the flour and baking soda with a bit of salt into the peanut butter mixture. When it has started to combine, add the other half. 


When the mixture is ready, use a tablespoon to divide out the dough onto a baking tray. Make sure the tray is lightly greased or lined with parchment. I only served up about half the mixture and froze the rest for another time - even I don't have that many baking trays! 


Press down with a fork on each of the dough balls to create the cookie shape and add a cross-hatch pattern. Bake in the oven at 190°C for 10 minutes (check on them after 8 minutes). 


Leave them to cool on wire racks for as long as you can and then gobble a few down! These tasted best fresh out of the oven as they were slightly chewy but I managed to make them last a week and they were equally nice later in the week.
