Italian bread with spinach and sun-dried tomatoes recipe


I like food, and I love Italian food. I have been lucky enough to visit Italy a couple of times in the past on various exchanges and I fell in love with the gorgeous food. As I was wandering around Sainsbury's last weekend I caught sight of this bread mix and figured that for 49p I wouldn't be risking very much if I bought it. This afternoon then, instead of revising, I decided to bake some bread...



Ingredients:

* Sainsbury's Italian herb and sun-dried tomato bread mix

* 30ml oil

* 330ml water

* Spinach to taste

* Sun-dried tomatoes to taste

Rub the bread mix with the oil in a bowl with your fingertips until the mixture resembles fine breadcrumbs. Gradually add the water to form a soft dough. (I had to add a little bit of extra flour at this stage as the mixture was just far too runny) I added some spinach and some extra sun-dried tomatoes to the dough at this stage.


Knead well on a floured surface until the dough is smooth and elastic then place it back into the bowl and cover it with lightly oiled cling film.


Leave the dough in a warm place to 'prove for an hour. It will rise and double in size. Knead well again on a floured surface for a few minutes and divide into balls and place onto a greased baking tray for rolls or into a greased loaf tin if you want to make a loaf.


Cover with lightly oiled cling film and leave to prove for another half an hour. Remove cling film and bake in the top of a pre-heated oven at 230°C/450°F/ Gas Mark 8 for 30 minutes or 15 minutes for rolls. 

Remove from oven and enjoy!


For my first attempt I think this was pretty good! It was ever so easy to do and I will definitely be looking out for more of these bread mixes next time I go shopping. The rolls taste absolutely lovely and I am looking forward to pairing them with some mozzarella and parma ham for an Italian inspired lunch!

I have to admit being out when I saw Spinach. However, they look really good, and I bet this would work really well with Rocket as a sub. May have to have a go!

Wow - when I first saw the mix I was a bit put off but they came out really well - may hunt for a wheat and dairy free recipie!
Sun-dried tomatoes are amazing as well - put them in a spaghetti bolognease - is tastes so much better.
Is it just you doing the blog now? I noticed Danni wasn't at the top. Dusting xxx

Oh yum! The bread turned out so well, I've never tried to make my own bread before but this looks really simple! I'll let you know if I get round to making it. I love the smell of freshly baked bread!

I've baked bread before quite a few times, and I think it is so so satisfying! The house smells gorgeous and you have something nice to eat! This is a great recipe and I have some spinach in the fridge so may well try it out. X
